Description
A 25 year old Glencadam, a distillery bottling, cask Batch 5, at 46%, 1314 bottles in all. Glencadam is a gentle, fruity Highland malt of orchard and tropical fruit. Its stills carry lyne arms angled upward, raising the reflux for a lighter, fruitier spirit. Its water comes from Loch Lee in the Cairngorms, piped down through the River Esk catchment.
Worked unhurried through the stillhouse, for a fine, fruity spirit with a light body. Maturation came in ex-Bourbon wood, the oak gentle behind the fruity spirit. In the oxidative, evaporative years the spirit concentrates to tropical fruit, honey and a waxy depth. Years in oak deepen the spirit to old gold, the body growing rounder and creamier with time. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. First fill wood drives the maturation, the cask clear in the light spirit.
Reduced to 46%, it is mellow and fragrant. Pear drops, melon and a soft barley sugar, lifted by a soft oak. Melon, pear and a creamy honey fill the middle. Green apple, citrus and a soft oak see it out. This is a gently fruity, creamy Highland malt.
