Description
Glencadam from the distillery, a 25 year old, from 1983, cask 1002, at 46%, 300 bottles in all. Glencadam is a gentle, fruity Highland malt of orchard and tropical fruit. It was bought by Angus Dundee Distillers in 2003, who also own Tomintoul, ending a three year closure. In the 1890s the Glasgow blender Gilmour Thomson used its malt in a Royal blend said to be favoured by Edward VII. It became a core malt of the Ballantine's blend after Hiram Walker bought it in 1954.
The spirit was distilled from unpeated malt, building a soft malt of orchard fruit and a creamy sweetness. A refill bourbon hogshead held it, keeping the fresh, fruity character to the fore. In the oxidative, evaporative years the spirit concentrates to tropical fruit, honey and a waxy depth. Active wood frames the fruit without ever crowding the light Highland spirit. A soft, creamy texture from the spirit carries through the maturation.
At an approachable 46% it is fresh and clean. Pear, apple and a soft cream, lifted by a soft oak. The mouthfeel is light and creamy, carrying the fruit. The finish is rounded, fruity and clean. This is a light, creamy Highland single malt.
