    This GlenAllachie was bottled by That Boutique-y Whisky Company, a 10 year old, at 49.9%. Raisin, chocolate and a dark spice fill the glass. A rich, deep Speyside single malt of dried fruit and chocolate. Its four stills carry downward angled lyne arms for a fuller spirit. This is a deep, sherried Speyside single malt.

    A GlenAllachie of a 10 year old chosen by That Boutique-y Whisky Company, at 49.9%, one of 2483 bottles. GlenAllachie is a Speyside single malt from the hills above Aberlour, below Ben Rinnes. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks.

    It was distilled to a full, generous cut, building a deep malt of dried fruit and dark sugar. An ex-Bourbon barrel shaped it, vanillin and a soft coconut under the malt. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The casks are picked closely, the wood matched to the rich GlenAllachie make. The wood frames the spirit without ever stripping the full Speyside body.

    Bottled at a cask strength 49.9%, it is deep and concentrated. Fig, walnut and a bittersweet chocolate, over a gentle, creamy oak. A baked apple and a warm cinnamon lift the middle. It finishes long, full and fruity. This is a deep, sherried Speyside single malt.
