Description
GlenAllachie from the distillery, a 7 year old, from 2018, cask 5753, at 61.3%, a festival cask. GlenAllachie is a deep, dark Speyside malt, this a peated bottling of sweet smoke and dark fruit. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks.
It was distilled to a full, smoky cut, for a thick, ester laden spirit carrying an oaky peat. Maturation came in ex-Bourbon wood, the oak gentle behind the spirit. Young and extractive, the cask sheds vanillin and toasted sugars over the full, smoky spirit. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The casks are picked closely, the wood matched to the rich GlenAllachie make. The wood frames the spirit without ever stripping the full Speyside body.
At its natural 61.3% it is rich and chewy. A smoky, dark sweetness, with a soft vanilla from the oak. Fig, honey and a sweet peat fill the middle. Soft smoke, spice and a dark fruit see it out. This is a peated Speyside malt of real standing.
