Glenallachie 11 Years Old (Palo Cortado Cask)

This official GlenAllachie, an 11 year old, at 48%. It is one of GlenAllachie's The Wood Collection bottlings. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour.

The spirit was taken gently through wash and spirit stills, shaping a rich Speyside body with real weight. It was matured in a Palo Cortado cask, the wood working deep into the malt. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The casks are picked closely, the wood matched to the rich GlenAllachie make. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.

Bottled at a cask strength 48%, it is deep and concentrated. Fig, walnut and a bittersweet chocolate, with a dry, nutty, savoury depth from the cask. Beneath it run dried fruit, dark sugar and a warm spice. Dried fruit, spice and a soft oak see it out. This is a dark, fruity Speyside single malt.
