Glenallachie 11 Years Old 2007 Cask #900176 (Signatory)

Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, bottled this GlenAllachie, distilled in 2007, from cask 900176, at 46%, one of 438 bottles. GlenAllachie is a Speyside single malt from the hills above Aberlour, below Ben Rinnes. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.

Distilled in copper pot stills, giving a full bodied Speyside spirit. It was fully matured in an Oloroso cask, the wood deep in the rich spirit. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. The casks are picked closely, the wood matched to the rich GlenAllachie make. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time.

At 46% it is smooth and rich. A rich, sherried sweetness, with dried fruit, fig and walnut from the cask. Beneath it run dried fruit, dark sugar and a warm spice. The close is rich and dark, fruit over a warm spice. This is the sherry led malt of Aberlour.
