Description
A 10 year old GlenAllachie, a distillery bottling, from 2012, at 54.9%. This is part of the Cuvee Cask Finish. GlenAllachie is a Speyside single malt, the home distillery of master distiller Billy Walker. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks.
Distilled to a full, generous cut, giving a full bodied Speyside spirit. It was matured in ex-Bourbon oak and finished in a run of casks led by Pedro Ximenez, layered over the bourbon vanilla. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.
Bottled at a cask strength 54.9%, it is deep and concentrated. A rich, sherried sweetness, with raisin, date and treacle from the cask. Fig, honey and a dark chocolate fill the middle. The close is rich and dark, fruit over a warm spice. This is a dark, fruity Speyside single malt.
