A 21 year old GlenAllachie, a distillery bottling, cask Batch 6, at 52.8%. GlenAllachie is a Speyside single malt known for its heavy sherry and wine cask maturation. It was mothballed in 1985 and reopened in 1989, a modern distillery by Speyside standards. It was built for the 1960s blend boom, its make long destined for the blender's vat. It was founded in 1967, designed by the architect William Delme Evans, his fourth distillery after Jura and Tullibardine.

It was run slowly off the spirit still, for a thick, ester rich spirit the casks then deepen. It was matured in an Oloroso cask, the wood working deep into the malt. Through oxidative maturity the esters concentrate, the orchard notes turning to raisin, fig and a dark chocolate. The full bodied spirit takes active wood well, carrying its dark sugars through the years. The wood frames the spirit without ever stripping the full Speyside body.

At a hearty 52.8% it carries real weight. Fig, walnut and a bittersweet chocolate, with dried fruit, fig and walnut from the cask. It is full and fruity, the spirit carrying the cask. It finishes long, full and fruity. This is a full bodied Speyside single malt of real richness.
