Description
A distillery release of GlenAllachie, a 10 year old, cask Batch 10, at 58.6%. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes.
Taken gently through wash and spirit stills, for a thick, ester rich spirit the casks then deepen. It was fully matured in a Pedro Ximenez cask, the wood deep in the rich spirit. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. The full bodied spirit takes active wood well, carrying its dark sugars through the years. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. Maturation runs slow and even in the on site dunnage warehouses at Aberlour.
At 58.6%, undiluted, it is dark and full. Baked apple, honey and a dark chocolate, with raisin, date and treacle from the cask. It is full and fruity, the spirit carrying the cask. A deep finish ends on dried fruit and a dark chocolate. This is a rich, sherried Speyside single malt.
