A pioneer of wine cask finishing, working with Chardonnay casks in the 1990s. A key malt in the Cutty Sark and Label 5 blends. This is a fresh, fruity Speyside single malt.

    A 14 year old Glen Moray from the bottler The Whisky Chamber, distilled in 2008, from cask TWC 0309, bottled at 55.2%, one of 237 bottles. Glen Moray is a light, easy Speyside single malt with a long line of cask finishes. It was founded in 1897 in the converted Elgin West Brewery, on the banks of the River Lossie.

    It was made on River Lossie water and condensed in shell and tube condensers, for a light, easy spirit with a soft malt. Maturation finished in a Red Wine cask, layered over the light Glen Moray make. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the body softer and the fruit riper. Long ageing turns the fresh apple towards dried fruit, honey and a soft spice. Refill oak lets the light, fruity Glen Moray character lead the way. It was a pioneer of wine cask finishing, working with Chardonnay casks back in the 1990s. Maturation in the bonded warehouses at Elgin is slow and steady.

    Bottled at a cask strength 55.2%, it is rich. Green apple, vanilla and a soft honey, with red berry and a dry spice from the cask. A baked apple and a gentle spice lift it. The finish is long, fruity and clean. This is a fresh, fruity Speyside single malt.
