A Glen Moray of a 12 year old chosen by the Glasgow bottler Douglas Laing, distilled in 2007, from cask DL 13735, bottled at 46%, one of 360 bottles. Glen Moray is a Speyside single malt from La Martiniquaise, light and approachable in style. It was a pioneer of wine cask finishing, working with Chardonnay casks back in the 1990s.
The spirit was run through the stills on River Lossie water for a light make, for a light, easy spirit with a soft malt. Ex-Bourbon casks held it, the gentle American oak letting the light fruit lead. By the integrating teens congeners fade and esters build, the light, fruity spirit growing rounder. River Lossie water and the tall stills give the light Glen Moray make. The clean, fruity spirit shows the cask clearly, vanilla and fruit to the fore. Maturation in the bonded warehouses at Elgin is slow and steady. The light spirit suits a wide range of cask finishes, from sherry to rum.
At 46% it is fresh, fruity and clean. Pear, honey and a soft malt, with a soft vanilla from the oak. The texture is light and clean, the fruit lifted by vanilla. Apple, pear and a soft oak see out the finish. This is Glen Moray, a pioneer of cask finishing.
