Description
From the Pitlochry bottler Signatory Vintage, a 21 year old Edradour, distilled in 2001, from cask 2310, bottled at 53.3%, one of 321 bottles. Edradour is a small, traditional Highland single malt, owned by Signatory since 2002. Under Signatory the range has grown to a wide run of sherry and wine cask bottlings.
The spirit was run through the small stills with their boil ball purifiers, the worm tubs lending a weighty, oily character. It was matured in a Pedro Ximenez cask, the wood working slowly into the rich malt. Through oxidative maturity esters concentrate, the dried fruit and chocolate turning rich over the waxy body. The worm tubs leave an oily weight that carries through the years in cask. The full bodied spirit shows the cask clearly, the sherry and oak to the fore. It once supplied blends such as House of Lords and King's Ransom. Signatory's wide cask range gives the small distillery an unusual variety of finishes.
At 53.3%, undiluted, it is deep and concentrated. Dried fruit, fig and a creamy vanilla, with raisin, date and treacle from the cask. Soft chocolate and a nutty oil sit behind the cask. It finishes long, rich and oily. This is a creamy, nutty Highland single malt.
