This official Eden Mill, at 46%. Eden Mill is a young, fresh Lowland single malt built on a brewer's choice of malts. It became Scotland's first combined brewery and distillery, on the University of St Andrews Eden Campus.
Distilled from Scottish malted barley in copper pot stills, giving a young, lively Lowland spirit. A Pedro Ximenez cask layered its character over the cereal driven Eden Mill make. No age is given, but vanillin vanilla and a bright apple mark it as young Eden Mill. A small distillery and an active cask bring a richness beyond the spirit's years. It leans on its brewing roots, using beer malts such as pale, chocolate and crystal malt in the mash. The young oak lends a light vanilla, the spirit doing much of the talking. It was founded in 2012 by Paul Miller as a brewery, and began distilling whisky and gin in 2014. The estuary setting gives a low angel's share, around two percent a year.
At an approachable 46% it is soft and lively. Apple, pear and a cereal sweetness, with raisin, date and treacle from the cask. A baked apple and a gentle pepper lift it. A bright finish ends on apple and a soft oak. This is the craft malt of Guardbridge by St Andrews.
