Description
An 18 year old Deanston from the bottler That Boutique-y Whisky Company, bottled at 47.6%, one of 148 bottles. Deanston is a green, honeyed Highland malt from the Teith valley, the only Scottish distillery to make its own power. It uses 100% Scottish barley and bottles its malt unchillfiltered, with no added colour.
It was run through the bulbous stills with their upward sloping lyne arms, giving the soft, malty Highland spirit. A refill bourbon hogshead held it, keeping the honeyed, waxy character to the fore. Into oxidative maturity, slow air ingress builds fruity ethyl esters (apple and pear) and a honeyed depth over the wax. The light, fruity make takes cask flavour well while keeping its honey and wax. Long ageing turns the fresh fruit towards honey, dried fruit and a soft spice. It runs an open top mash tun, two wash and two spirit stills of a bulbous shape.
At cask strength 47.6% it is full bodied. Green apple, honey and a waxy malt, with a soft vanilla from the oak. Soft orchard fruit and honey sit behind the cask. It finishes long, waxy and warming. This is the cotton mill malt of the River Teith.
