Description
From the bottler Sexywhisky, a 12 year old Deanston, distilled in 2009, bottled at 54%, one of 20 bottles. Deanston is a Highland malt made in a vaulted stone mill, waxy and malty in style. It was mothballed in 1982 and revived in 1990 under Burn Stewart.
It was distilled from unpeated Scottish barley in bulbous copper stills, for the waxy, honeyed make Deanston is known for. Maturation came in an Oloroso cask, layered over the fruity Deanston make. Through integration spirit and wood marry, vanillin settling into a rounded vanilla as ethyl esters lend a riper apple and pear. A gentle maturation suits the soft make, the honey and wax growing richer with time. Unchillfiltered and at natural colour, it keeps the full waxy body in the glass. The waxy texture is the Deanston signature, carried through the years in cask. The light, fruity make takes cask flavour well while keeping its honey and wax.
At a natural 54% it is full and waxy. Green fruit, honey and a soft spice, with dried fruit, fig and walnut from the cask. The texture is soft and waxy, the fruit lifted by vanilla. The finish is rounded, honeyed and gently spiced. This is a green, honeyed Highland malt with a waxy heart.
