Deanston from the distillery, at 47.8%. Deanston is a honeyed, waxy Highland malt distilled beside the River Teith since 1966. It uses 100% Scottish barley and bottles its malt unchillfiltered, with no added colour.

Mashed in the open top tun and fermented long for a fruity make, for the waxy, honeyed make Deanston is known for. Finished in an Oloroso cask, the wood building over the green, waxy fruit. With no age statement, the oak has given vanillin as vanilla and oak lactones as coconut over the waxy, fruity spirit. The waxy texture is the Deanston signature, carried through the years in cask. Its wash is fermented long, for a fruity, estery character. Refill oak lets the waxy, honeyed Deanston character lead the way. The long ferment and clear wort give a fruity spirit that ages with grace. Maturing in the vaulted stone warehouse, the spirit develops slow and steady.

At 47.8%, undiluted, it is deep and honeyed. Baked apple, honey and a creamy malt, with dried fruit, fig and walnut from the cask. Soft orchard fruit and honey sit behind the cask. The finish runs long, fruity and warming. This is the soft, waxy malt of Doune.
