Description
This official Deanston, a 14 year old, cask Batch 2, at 57.9%, 1400 bottles in all. Deanston is a soft, malty Highland single malt from the old Adelphi cotton mill at Doune. It was mothballed in 1982 and revived in 1990 under Burn Stewart.
It was distilled from unpeated Scottish barley in bulbous copper stills, for the waxy, honeyed make Deanston is known for. First fill bourbon gave a fuller vanilla and a touch of coconut from the lactones. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the body softer and waxier. Vanillin and oak lactones from the wood lend vanilla and coconut over the fruit. Its flagship is the 12 year old, bottled unchillfiltered at 46.3%. The spirit is condensed in shell and tube condensers for a clean, fruity make. The waxy texture is the Deanston signature, carried through the years in cask. Refill oak lets the waxy, honeyed Deanston character lead the way.
At cask strength 57.9% it is full bodied. Honey, malt and a gentle clove, with a soft vanilla from the oak. A baked apple and a gentle clove lift it. It finishes long, waxy and warming. This is a Highland single malt of real character.
