Description
A Dalmunach of a 7 year old chosen by the Huntly bottler Duncan Taylor, distilled in 2015, from cask 10835453, bottled at 54.7%, one of 88 bottles. Dalmunach, built on the Imperial site at Carron, is a modern Speysider made mostly for blends. The distillery sits at Carron, in the heart of Speyside on the Spey.
It was drawn off four wash and four spirit stills in their circular cluster, giving the clean, fresh Speyside spirit. It rested in ex-Bourbon oak, the wood adding a light honeyed vanilla. At an extractive age eugenol lends a clove note and lactones a coconut, the young spirit fresh, clean and fruity. Even young, the spirit shows a clean, fruity Speyside charm. The light, fruity spirit is made chiefly for the Chivas Regal blends. Its eight stills stand in a striking circular cluster around a central spirit safe, a showpiece of modern design. Independent bottlers have been quick to release young single casks of this new distillery.
Bottled at a cask strength 54.7%, it is rich. A light, clean fruitiness, with a soft vanilla from the oak. Apple, pear and a soft honey fill the middle. A fresh, honeyed finish ends on apple and pear. This is a fresh Speyside malt of the new generation.
