    A 7 year old Dalmore from the bottler The Single Cask Ltd, 2014, at 60.6%. Soft orange and a rich, treacly malt, with plum, chocolate and red berry from the cask. Owned by Whyte and Mackay, with a rich house style shaped by Richard Paterson. Founded in 1839, it wears the twelve pointed Royal Stag of the Mackenzie clan. This is a rich, dried fruit laden Highland malt.

    This Dalmore was bottled by the bottler The Single Cask Ltd, a 7 year old, distilled in 2014, from cask 800147, bottled at 60.6%, one of 100 bottles. Dalmore is the Highland malt of the Royal Stag, rich with orange, chocolate and sherry. The distillery was founded in 1839 by Alexander Matheson on the Cromarty Firth at Alness.

    It was drawn off stills whose cooling jackets build a rich, oily spirit, for a full, opulent Highland spirit. A Cabernet Sauvignon cask gave blackcurrant, red berry and a dry spice. At an extractive age eugenol lends a clove note and lactones a coconut, the spirit rich, oily and orange scented. Long ageing turns the fresh orange towards marmalade, dark chocolate, coffee and a warm spice. The full bodied make rewards a long, sherried maturation in good wood. Much of its sherry comes from aged Oloroso casks, the Matusalem, Apostoles and Amoroso butts of Gonzalez Byass.

    Bottled at a cask strength 60.6%, it is rich. Orange, dark chocolate and dried fruit, with plum, chocolate and red berry from the cask. Beneath it run orange, dark chocolate and dried fruit. The finish is long, rich and chocolatey. This is Dalmore, rich with orange and dark chocolate.
