Dalmore 31 Years Old 1991 Old & Rare A Platinum Selection (Hunter Laing)

The independent Hunter Laing bottled this Dalmore, a 31 year old, distilled in 1991, bottled at 51.1%, one of 89 bottles. Dalmore is the Highland malt of the Royal Stag, rich with orange, chocolate and sherry. The Dalmore range climbs to some of the oldest and most expensive whiskies in the world.

Distilled for the thick, full bodied spirit Dalmore is known for, for a heavy, rich make that suits aged sherry wood. An ex-Bourbon barrel shaped it, vanilla and citrus beneath the rich malt. Ethereal and old, decades draw the malt to a rich, waxy depth of sotolon, old oak and dried fruit. Years in oak round the spirit, the fruit deepening to chocolate, marmalade and treacle. Much of its sherry comes from aged Oloroso casks, the Matusalem, Apostoles and Amoroso butts of Gonzalez Byass. The full bodied make rewards a long, sherried maturation in good wood.

At its natural 51.1% it is concentrated. Baked fruit, coffee and a dark sweetness, with a soft vanilla from the oak. The texture is thick and oily, the fruit lifted by a rich sherry. The finish is deep, sherried and dark. This is a rich, full bodied Highland single malt.
