Description
From the Glasgow bottler Hart Brothers, an 11 year old Dalmore, distilled in 2007, bottled at 55.6%. Dalmore sits above the Cromarty Firth, its water jacketed stills building a thick, oily spirit. The rich, dried fruit style runs through the core range, from the twelve year old upward.
Distilled in flat topped wash stills and water jacketed spirit stills on River Averon water, building the luscious Dalmore style. Ex-Sherry wood, the Matusalem and Apostoles style, gave a deep marmalade and chocolate richness. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the rich body fuller and darker. The cool Highland air on the firth gives a slow, even maturation. The rich, oily spirit takes cask flavour superbly, especially aged sherry wood. The slow loss of the angel's share concentrates the rich, sherried core over the years.
At a natural 55.6% it is full and honeyed. A rich, oily chocolate orange, with dried fruit, chocolate and orange from the cask. Beneath it run orange, dark chocolate and dried fruit. The finish is deep, sherried and dark. This is one of the Highlands' most opulent single malts.
