This Dailuaine was bottled by the bottler Whiskymax, a 12 year old, at 51.5%. Dried fruit, malt and a rich, savoury depth run through it. It once had its own railway siding and a little locomotive, the Puggy. Owned by Diageo, with a Flora and Fauna 16 year old the regular single malt. This is Dailuaine’s heavy, meaty Speyside style.

Description
The bottler Whiskymax bottled this Dailuaine, a 12 year old, distilled in 2010, from cask 303776, bottled at 51.5%, one of 300 bottles. Dailuaine is a Diageo Speyside distillery, its robust malt the backbone of many a blend. It sits near Aberlour, in the heart of Speyside by the River Spey.
Worked through the big stills for a meaty, malty spirit, for a rich, meaty make that suits sherry wood. An ex-Bourbon barrel shaped it, vanilla beneath the robust, full bodied spirit. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, fruit deepening to dried fruit. Refill oak lets the robust Dailuaine character lead, malt and dried fruit beneath. The full bodied make rewards a long, patient maturation in good wood. The slow loss of the angel's share concentrates the rich, malty core over the years. Its big stills give a heavy, full bodied spirit that takes sherry wood especially well.
At cask strength 51.5% it is full bodied. Apple, dried fruit and a meaty edge, with a soft vanilla from the oak. Dried fruit, malt and a savoury spice fill the middle. The finish is long, rich and savoury. This is the robust, sherried malt of Carron.
