Description
This Dailuaine was bottled by the bottler Torsten Paul Whisky Company, a 12 year old, distilled in 2009, from cask 314939, bottled at 55.7%, one of 296 bottles. Dailuaine, whose name is Gaelic for the green vale, is a heavy, full bodied Speysider. Its rich, robust malt has long been a backbone of the Johnnie Walker blends.
Drawn off three wash and three spirit stills, giving the heavy, meaty spirit at its heart. A sherry butt held it, the wood lending raisin, fig and walnut to the robust malt. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, fruit deepening to dried fruit. A first fill sherry cask suits the robust spirit, dried fruit meeting the meaty weight. The cool Speyside air gives a slow, even maturation, the heavy malt deepening. Dailuaine's heavy, malty make is prized by blenders for the body it gives.
At a hearty 55.7% it carries real weight. Apple, dried fruit and a meaty edge, with dried fruit, fig and walnut from the cask. Dried fruit, malt and a savoury spice fill the middle. Dried fruit, malt and a savoury oak see out the finish. This is Dailuaine's heavy, meaty Speyside style.
