    A 10 year old Dailuaine from the bottler The Whisky Chamber, 2008, at 55.1%. Rich and malty, all dried fruit, fig and a savoury depth, with raisin, date and treacle from the cask. Founded in 1852, it was the first distillery to use the pagoda roof. Its big stills give a full bodied spirit that loves sherry wood. This is a robust backbone of the great blends.

    This Dailuaine was bottled by the bottler The Whisky Chamber, a 10 year old, distilled in 2008, from cask 316355, bottled at 55.1%, one of 317 bottles. Dailuaine is a rich, meaty Speyside single malt from the banks of the Spey near Aberlour. Its rich, robust malt has long been a backbone of the Johnnie Walker blends.

    It was worked through the big stills for a meaty, malty spirit, to build a robust, malty, sherry loving character. A sherry cask wrapped the rich spirit in dried fruit and a nutty depth, a fine match for the heavy malt. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, fruit deepening to dried fruit. Long ageing turns the fresh fruit towards dried fruit, fig, leather and a warm spice. Years in oak round the spirit, the fruit deepening to dried fruit and a savoury spice. Most of its make goes to blending, with a Flora and Fauna sixteen year old the regular single malt.

    At 55.1%, undiluted, it is deep and fruity. Orchard fruit, malt and a warm spice, with raisin, date and treacle from the cask. The mouthfeel is heavy, the fruit carried on a meaty, malty body. The finish is deep, rich and savoury. This is the robust, sherried malt of Carron.
