Description
A 13 year old Dailuaine from the Pitlochry bottler Signatory Vintage, distilled in 2008, from cask 800044 + 800045, bottled at 46%. Dailuaine is a heavy, fruity Speyside single malt from near Aberlour. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills.
The spirit was made in large copper stills for a rich, robust make, for the rich, full bodied make Dailuaine is known for. It was matured in refill ex-Bourbon oak, vanilla and a soft honey behind the rich malt. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. The rich, full bodied spirit takes cask flavour well, especially sherry wood. A first fill sherry cask suits the robust spirit, dried fruit meeting the meaty weight. A fire in 1917 destroyed the maltings, and the distillery was rebuilt soon after.
At 46% it is smooth and honeyed. Apple, dried fruit and a meaty edge, with a soft vanilla from the oak. It is robust and fruity, the full bodied spirit shining through. It finishes robust, malty and warm. This is a rich, dried fruit laden Speyside single malt.
