Description
The bottler Keeble Cask Company Ltd bottled this Dailuaine, a 12 year old, distilled in 2013, from cask 302708, bottled at 57.2%, one of 304 bottles. Dailuaine, founded in 1852, gave Scotch its first pagoda roofed kiln. It sits near Aberlour, in the heart of Speyside by the River Spey.
It was worked through the big stills for a meaty, malty spirit, building the heavy Dailuaine style. A bourbon barrel held it, vanilla and a soft spice over the malty spirit. In integration lactones (coconut) and vanillin (vanilla) knit with the malt, fruit deepening to dried fruit. Long ageing turns the fresh fruit towards dried fruit, fig, leather and a warm spice. The name is Gaelic for the green vale, after the hollow in which the distillery sits. Most Dailuaine goes quietly into blends, a robust filler kept in part as single malt. In 1889 it became the first distillery to use the pagoda roof, the Doig Ventilator designed by Charles Doig.
Bottled at a cask strength 57.2%, it is rich. Malt, dried fruit and a rich spice, with a soft vanilla from the oak. Dried fruit, malt and a savoury spice fill the middle. The finish is long, rich and savoury. This is a rich, dried fruit laden Speyside single malt.
