Description
From the bottler High Spirits Distribution, an 11 year old Dailuaine, distilled in 2008, from cask 08/1062/4, bottled at 56.5%, one of 642 bottles. Dailuaine is the rich, malty Speyside single malt that helped build the Johnnie Walker blends. It passed to DCL and Scottish Malt Distillers in the 1920s and was later modernised.
Distilled in large conical necked stills on Bailliemullich Burn water, for the rich, full bodied make Dailuaine is known for. A Pedro Ximenez cask added raisin, date and a treacle sweetness. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. Most Dailuaine goes quietly into blends, a robust filler kept in part as single malt. The rich, full bodied spirit takes cask flavour well, especially sherry wood. Single malt Dailuaine is rare as an official bottling, so most come from independents.
Bottled at a cask strength 56.5%, it is rich. A rich, full bodied sweetness, with dried fruit, fig and walnut from the cask. Dried fruit, malt and a savoury spice fill the middle. The finish runs meaty, fruity and warm. This is the rich, full bodied Speyside malt of Dailuaine.
