    An 11 year old Daftmill from the Paris house La Maison du Whisky, 2009, at 60.6%. Grass, lemon and a floral honey fill the glass, with dried fruit, fig and walnut from the cask. One of the smallest outputs of any distillery in Scotland. Water comes from a private well on the farm at Cupar in Fife. This is the patient farm malt of Fife.

    An 11 year old Daftmill from the Paris house La Maison du Whisky, distilled in 2009, from cask 028/2009, bottled at 60.6%, one of 649 bottles. Daftmill is an elegant, restrained Lowland single malt of real finesse. It is one of the smallest distilleries in Scotland, with a tiny annual output.

    Distilled in a single pair of onion shaped stills on farm well water, giving the delicate, floral Lowland spirit. A sherry butt held it, the wood lending raisin and walnut. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. Each small batch is laid down with patience, the whisky released only when ready. The onion shaped stills give a light spirit that ages with grace. The farm steading dates to the 18th century, the distillery built quietly into its old buildings. The cool Lowland air gives a slow, even maturation in the farm dunnage warehouse.

    At cask strength 60.6% it is full bodied. Grass, citrus and a gentle vanilla, with dried fruit, fig and walnut from the cask. Soft orchard fruit and a floral honey sit behind the cask. The finish runs delicate, grassy and fresh. This is a clean, fruity Lowland single malt.
