Description
A 13 year old Daftmill, a distillery bottling, from 2007, cask 047-053/2007, at 46%, 1690 bottles in all. Daftmill is the patient farm malt of the Cuthbert brothers, distilled around the farming year. Barley is grown on the farm itself, malted nearby, in a true field to bottle approach.
The spirit was drawn off the onion shaped stills of the Fife farm, for the light, elegant make Daftmill is known for. A bourbon barrel held it, vanilla and a soft citrus over the grassy malt. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, lemon deepening to honey. The onion shaped stills give a light spirit that ages with grace. The farm steading dates to the 18th century, the distillery built quietly into its old buildings. Active wood frames the fruit without overwhelming the delicate, grassy spirit. Maturation in the gentle Fife climate keeps the spirit fresh and floral.
At 46% it is smooth and honeyed. Grass, citrus and a gentle vanilla, with a soft vanilla from the oak. Soft orchard fruit and a floral honey sit behind the cask. The finish is light, fruity and clean. This is a refined Lowland single malt from a Fife farm.
