    The Italian bottler Wilson and Morgan bottled this Caol Ila, a 14 year old, at 52.8%. Lemon, brine and a clean smoke over an oily body, with dried fruit, fig and walnut from the cask. Caol Ila is the largest distillery on Islay. Most of its make goes into the Johnnie Walker blends. This is a clean, maritime malt from the Sound of Islay.

    A 14 year old Caol Ila from the Italian bottler Wilson and Morgan, from cask 302326, bottled at 52.8%, one of 244 bottles. Caol Ila is among the most widely traded of Islay's single malts. Much of the spirit leaves the island by sea to mature on the mainland.

    Run from peated malt through tall stills on Loch nam Ban water, for a clean, coastal, oily make. Ex-Sherry wood added a dried fruit richness beneath the smoke. Through the integration phase spirit and wood marry, vanillin settling into a rounded vanilla as the guaiacol phenols mellow into a softer smoke. Caol Ila's smoke leans to lemon, olive oil and brine rather than tar or iodine. The medium peating leaves a smoke that is firm but never heavy. The lighter style means the cask and the citrus speak alongside the peat. Its spirit also feeds blends such as Bell's and Black Bottle.

    At a hearty 52.8% it carries real weight. A clean ashy smoke with lime and brine, with dried fruit, fig and walnut from the cask. An oily smoke coats the palate, citrus and brine behind. A long maritime smoke closes it. This is an elegant Islay single malt.
