Single grain Cambus, an independent Signatory Vintage bottling, aged 30 year old distilled in 1991, from cask 104228 and bottled at 55.4%. Just 439 bottles were filled. Founded around 1806 by John Moubray, Cambus was a Lowland grain distillery that fell silent in 1993. It was one of the five grain distilleries that founded the Distillers Company Limited in 1877.
Distilled in continuous stills for a light, sweet grain spirit, building the gentle Cambus grain style. An ex-Bourbon barrel shaped it, American oak giving coconut and toffee. Beyond twenty five years the grain grows deep and oily, coconut, butterscotch and crème brûlée over polished oak. Maturation in ex-Bourbon wood suits the light, sweet grain particularly well. It was one of the five grain distilleries that founded the Distillers Company Limited in 1877. In 1906 its grain was advertised as not a headache in a gallon, helping win the What is Whisky case.
At 55.4%, undiluted, it is deep and sweet. The ex-Bourbon gives crème brûlée, coconut and vanilla. A butterscotch and a creamy oak lift it. A sweet, coconut led finish lingers. This is a single grain from the lost Cambus distillery.
