    This Tomatin was from the independent bottler Brothers in Malt, a 24 year old release from 1991 and bottled at 53.5%. Tomatin is the soft, fruity Highland malt of a distillery founded in 1897 near Inverness. A very long fermentation, among the longest in Scotch, builds the fruity character.

    Worked through onion stills for a light, fruity spirit, for the soft, fruity Highland make Tomatin is known for. It was matured in ex-Bourbon oak, lending vanilla and a soft honey. Beyond twenty years the malt grows deep and honeyed, dried fruit and oak spice over orchard fruit. The unpeated spirit lets the wood and the fruit speak without smoke. Under Japanese stewardship the focus turned from sheer volume to quality. The very long fermentation is central to the distillery's fruity character. The distillery sits beside the A9, the old road north to Inverness. Cu Bocan focuses on unusual cask finishes, from sherry to wine and beyond.

    At 53.5%, undiluted, it is deep and fruity. A mellow, fruity character, and the bourbon cask adds vanilla and a gentle sweetness. Beneath it run apple, pear and a soft spice. It closes soft, fruity and warm. This is Tomatin, the fruity Highland malt.
