Description
Signatory Vintage, the Edinburgh independent founded in 1988, released this 12 Year Old, a 2008 vintage from a small parcel of casks, an outturn of 710 bottles. Mortlach, the first licensed distillery in Dufftown, runs a 2.81-times distillation and worm-tub condensers that give the heavy, meaty spirit fans call the Beast of Dufftown.
Across twelve years in American oak, esterification got underway and the meaty spirit rounded, vanilla and light toffee folding in.
At 56.8% it shows vanilla, cooked fruit and a savoury weight carried on the heavy Dufftown body, undiluted. A Beast of Dufftown.
