Signatory bottled this 10 year old 2011 Knockando for its Un-Chillfiltered Collection, vatted from three ex-Bourbon casks (306253, 306254 and 306257), for Germany. Knockando, founded in 1898 in Speyside, is the heart of the J&B blend.
Under Diageo today, the distillery makes a light, fine Speyside malt. Matured in ex-Bourbon casks over ten years, the wood frames the malt cleanly.
Bottled at 46%, non-chill-filtered. The ex-Bourbon gives vanillin for vanilla and oak lactones for coconut, with maltol for toffee, the lack of chill filtration adding texture. An independent Signatory Knockando.
