Signatory bottled this 16 year old 2008 Knockando for its Cask Strength Collection from Pedro Ximenez cask 101, a sibling to cask 103 from the same vintage. An outturn of 339 bottles. Knockando, founded in 1898 in Speyside, is the heart of the J&B blend.
Now owned by Diageo, the distillery makes a light, fine Speyside spirit that takes deep sherry well. Matured in a single Pedro Ximenez cask over sixteen years, the wood pulls the malt towards sweet dark fruit.
Bottled at its natural cask strength of 50.5%. The Pedro Ximenez gives raisin and date from its melanoidins over the soft Speyside malt. A sweet sherried single-cask Knockando, sibling to cask 103.
