    Signatory bottled this 16 year old 2008 Knockando for its Cask Strength Collection from a Pedro Ximenez cask, number 103, an outturn of 333 bottles. A sweet, sherried single cask of the Speyside distillery founded in 1898, the heart of the J&B blend.

    Now owned by Diageo, the distillery makes a light, fine Speyside spirit that takes deep sherry well. Matured in a single Pedro Ximenez cask over sixteen years, the wood pulls the malt towards sweet dark fruit.

    Bottled at its natural cask strength of 51.6%. The Pedro Ximenez gives raisin and date from its melanoidins. The recorded notes run to dried fruit, a sherried character, chocolate, honey, old wood and a leafy edge. A sweet sherried single-cask Knockando.
