Description
This Sherry Cask Release is a 5 year old Kilchoman matured in Oloroso casks. An outturn of 6,000 bottles. Founded by Anthony Wills in 2005 at Rockside Farm, Kilchoman is the only farm distillery on Islay.
At Rockside Farm the whole process runs from barley to bottle on one site. Matured in Oloroso casks, the sherry wood pulls the young peated spirit towards dark fruit.
Bottled at 46%. The Oloroso gives dried fruit, melanoidins reading as fig and raisin, while peat phenols carry the smoke. The recorded notes run to a coal-gas edge, dried fruit, fresh fruit, dried hay, a medicinal edge and smoke. A sherried farm malt.
