Description
This Single Cask Release is a 6 year old from 2011 matured in Pedro Ximenez, cask 696. An outturn of 213 bottles. Kilchoman, founded by Anthony Wills in 2005, is the only farm distillery on Islay.
At Rockside Farm the whole process runs from barley to bottle on one site. Matured in a single Pedro Ximenez cask, the wood pulls the young peated spirit towards sweet dark fruit.
Bottled at its natural cask strength of 56.5%. The PX lends raisin and date through its melanoidins, the peat phenols a smoky layer. The recorded notes run to dried fruit, a sherried character, smoke, citrus and a coal-gas edge. A young PX single cask.
