Ardbeg 12 Years Old 2005 (North Star Spirits)

Released through North Star Spirits' Cask Series 004, the fourth numbered batch in the bottler's main release programme. North Star Spirits was founded in 2017 by Iain Croucher in Glasgow, joining the new wave of UK based independent bottlers (Decadent Drinks, Single Malts of Scotland, Brave New Spirits) that emerged through the late 2010s alongside the established Cadenhead, Signatory and Douglas Laing operations.

Filled into refill bourbon hogshead in 2005 during the LVMH owned Glenmorangie modern stable era and matured for twelve years before bottling in 2018 at 51.9% ABV, non chill filtered with no added colour. The Cask Series programme runs sequentially with each batch presenting multiple single casks from different distilleries under the unified series numbering.

Twelve years of refill bourbon maturation builds early mid age expression. Cis and trans oak lactones (coconut, oiled wood) build at moderate concentration, hemicellulose breakdown furans (furfural, hydroxymethylfurfural) deliver emerging caramel and toasted almond, and lignin vanillin and syringaldehyde layer vanilla and baking spice. The modern Ardbeg 50 to 55 ppm peat phenols (guaiacol, syringol, 4 methylguaiacol, p cresol) carry full intensity at this age for classic phenolic smoke. The Ardbeg purifier ester signature delivers concentrated pineapple, lemon and tropical fruit beneath the integrated phenolic core.
