Description
Distilled at Aberfeldy and matured 15 years in a single Oloroso sherry cask numbered 1872, bottled by John Dewar & Sons in 2022 at cask strength 58.8% under the Exceptional Cask Series for event market release. 564 bottles in total. The event market channel within ECS handles bottlings tied to specific industry events, festivals or trade gatherings, sitting outside the standard European specialist distribution that handles most of the series.
Long fermentation Aberfeldy wash from the four still configuration, distilled around 2007 under John Dewar & Sons (Bacardi) ownership. Filled into a single Oloroso sherry cask and aged 15 years at the distillery's warehouses. Bottled at cask strength 58.8% with no chill filtering and no caramel adjustment, sitting at the higher end of the cask strength range for ECS bottlings of this age.
Fifteen years in a seasoned Oloroso butt at cask strength gives a developing sherry signature with full ester support: melanoidins from prior sherry reduction in the staves contribute walnut and dried fig, ellagitannins and gallic acid from European oak supply tannin grip, and sotolon development is present but not yet at peak. Aberfeldy's house ester profile (ethyl laurate, ethyl myristate, heavier alcohols) drives a sharp heather honey core at 58.8%, the high strength holding the full ester load against the sherry tannin frame on the palate.
