Alambic Classique's Rare & Old Selection presents the firm's deepest aged single casks at natural strength, sitting above the regular Special Vintage Selection in age and rarity. The Munich based German bottler draws from broker held stocks with releases typically running to small bottle counts. This Glenrothes was distilled in 1990 and bottled in 2020 from cask 20026 at a sustained 61.7%, with 113 bottles released into the German market. The relatively small outturn at high strength suggests low humidity warehousing and tight cask retention.
Thirty years in a single Oloroso cask at sustained 61.7% delivers concentrated cask interaction across a long extractive window. The cask sat in lower humidity warehousing favouring water rather than alcohol evaporation. By this age the cask's first fill activity has tapered, with secondary extractions leading: lignin's slow breakdown delivers syringaldehyde, vanillin and eugenol, hemicellulose chemistry produces furfural and hydroxymethylfurfural, and the residual Oloroso sherry's sotolon contributes the savoury walnut depth that distinguishes long aged sherry.
On the nose, leathery depth sits with tobacco, nutty oiliness and polished oak underneath, the cask's accumulated oxidative chemistry clearly forward. Honey and malt extract thread through. The palate runs concentrated at 61.7%: fig, raisin and dark chocolate, with European oak's grip closing tight around the spirit. Cocoa nib bitterness emerges mid palate. The finish is long, oily and resinous, the cask still in active extraction with deep secondary chemistry leading the close.
