Duncan Taylor's Octave range uses small ex-sherry casks of roughly 60-70 litres for short, intense finishing periods. The casks are made by splitting and recoopering a standard 500-litre sherry butt into eight smaller vessels, hence the Octave name. The format dramatically increases the wood-to-spirit ratio, so even short finishing periods produce concentrated cask transfer compared to maturation in standard butt or hogshead formats. This 15 year old Bunnahabhain comes from cask 3842174, distilled in 2008 and bottled in 2024 at 54.2% natural strength.

The Octave finish on a 15 year old produces a different effect from the same treatment on younger or older Bunnahabhain. Mid-life spirit has already integrated with its primary cask but hasn't entered the heavier register of very long maturation, and the Octave's small format delivers Oloroso character cleanly on top: the wood transfers nutty walnut, dried fig and leather notes with the high concentration the format produces, layering them against the existing spirit-cask balance.

On unpeated Bunnahabhain at fifteen years, the Octave result preserves the distillery's coastal signature underneath the sherry top note. Oily texture, light maritime brine and the underlying mineral character carry through the layered structure. The 54.2% bottling sits at full natural strength after the finish. Each Octave release runs to roughly 60-90 bottles given the small cask volume. Natural colour, non-chill-filtered, single cask.
